Inhibitory Effect of Rosemary Leaf Extract On The Rancidity of Palm and Palm Kernel Oils.

ABSTRACT:

The  rancidity  inhibitory  property  of  Rosemary  leaf  extract  on  palm  and  palm  kernel  oils  was  studied.  Hot extraction  process  was  used  with  ethanol  as  solvent  to  obtain  the  extract.Free  fatty  acid  values  ;acid  values; iodine  values;  peroxide  values;  and    saponification  values  of  oil  samples  blended  with  Rosemary  leaf  extract in  the  ratios  of  :1  ml:100  cm3    of  oil;  2mls:  100  cm3    of  oil  ;3mls  :100  cm3  of  oil  and  unblended  oil  samples used  as  control  were  monitored  over  15  weeks  and  determined  triweekly  as  indicators  of  rancidity  using  the A.O.A.C    (1984)  and  Morris  (1999)  methods.  The  blended  oil  samples  showed  marked  inhibition  in  the development  of  free  fatty  acid  and  peroxides  and  in  the  reduction  of  iodine,  acid  and  saponification  values  for the  period  indicating  inhibition  of  rancidity.  The  inhibitory  levels  were  also  found  to  be  highest  in  the  oil samples blended with 3mls of the extract.
